How to perform an update with ftp?

Because of some installation/update issues, I want to perform an update with ftp.
Is there a procedure for this? Or is it just "copy the files to the location where you think it should be" and do a "Update all tables using the current install sql-file".
Using Joomleague since version 0.90
Production: Latest Joomla version, Latest JoomLeague version

copy to /<joomla root>/tmp and use the normal extensions installation by path

That's clear.
But how when I don't want to use the Joomla Extension Manager, because of problems with the maximim time/size limit (php)?

hmm i would not recommend that, too many steps are neccessary ... if you want to know which, check the install.php
